Thursday Thirteen #12 — Organized In The New Year

Welcome back to Thursday Thirteen! With the New Year resolutions looming in the near future, I am sharing with you 13 ways to remain organized in 2008 and for years to come. Click on the links for more details.

  1. Desk Calendar: I hide a large desk calendar inside my guest closet;
  2. Notebooks: Never again lose notes jotted on a scrap of paper. I have a tiny one in my purse for notes on the go; a small one near every phone and especially near the answering machine, just the right size for a name and phone number; regular school notebooks for projects, ideas, my blog, journals, etc.;
  3. Binders: I keep regular school binders by category such as my household binder;
  4. Flash Drives: I’m so excited flash drives were invented and have so drastically dropped down in price. I back up just about everything by category on flash drives. These days, you can even buy them in packs of 10! I have one for my photos, one for my blog, one for my recipes, one for my documents, etc.
  5. Easy Zipper Bags: These are not relegated to just the refrigerator. I use them in just about every room. They are particularly good to help children store and easily find their toys;
  6. Bread Bag Close Tabs: I use these in the freezer!
  7. Kitchen Colander: Really, I’m not crazy, and a colander does keep me organized — in the bathtub!!
  8. Plastic Grocery Bags: Paper or plastic? Plastic for me because they get reused in a whole slew of ways before finding themselves in the landfill;
  9. Trading Card Storage: Our son has lots of game and trading cards, and like his friends and their parents, we were having a hard time finding a good way to organize them at any price until I thought of using this free box.
  10. Keeping Our Bookcases From Breaking: My husband, our son and I are all avid readers so our bookcases are always bulging despite using the library. I recently found this solution and so far it seems to be working as it should. If any of you do this too, let all of us know how it’s working for you. 🙂
  11. Letter Writing Containers: I like to write short notes and thank yous to make someone’s day. I found it’s a lot more likely to get done if I’m organized. I have a zippered binder in my car where I seem to spend too much time waiting. The binder is within arm’s reach of the driver’s seat and I keep it stocked with small blank notes, thank you cards, some stamps, pens and colored pencils, Post Its, paper clips, a small ruler, pencil sharpener, pretty stickers and address labels for both myself and the people I write to most often, an address book, and a calendar marked with birthdays, anniversaries and special occasions. I keep a pretty container stocked with the same items near my easy chair and by my bedside.
  12. Lazy Susans: I have no idea why they call Susan lazy when she’s so smart, but she keeps the hard-to-reach back corners of my deep kitchen cabinets stocked with my mugs on one shelf and my glasses on another;
  13. Diaper Bag/Grown Boy or Girl Bag: Our son has outgrown diaper bags, but I used to keep one large bag in each car with extra supplies so that I would never run out of anything. I carried a small, light one everywhere we went on foot, but the big, heavy one remained in the car with everything a baby could possibly need because if you don’t have it, that’s when you’ll need it. Today, I still keep a bag with non-spoiling munchies, water, spare socks, a blanket, drawing supplies, one or two toys, wipes, Kleenexes, picnic supplies and plastic grocery bags. Because we live far away from civilization, I’m ready for wasted time in waiting rooms or traffic jams, we can have an impromptu picnic at the park, and having had to run for our lives on several occasions because of California fires, I’d rather be ready like the Scouts.

WFMW — Magic Reindeer Food

wfmwbluebanner.jpgWhen our son was about 2 years old, one of our neighbors gave him some magic reindeer food. Although we had never heard of this tradition, our son enjoyed it so much that we have continued it without fail each Christmas Eve. Just like many people leave milk and cookies for Santa, we also leave food for Rudolph, Donder, et al, and it is MAGIC no less. According to our neighbor, to help the reindeer find your house faster, just sprinkle a bit of magic food on your front lawn or even on your balcony. If you’ve been good, they will zero in on your house lickety-split and they will find new energy to visit the next house. On Christmas Eve, before your children go to sleep, have your children sprinkle the food. Our first year, I was ready early the next morning with my broom to sweep the food away from our small covered balcony, but the wind had blown it all away. Not one bit has ever been left over, especially now that we have a yard, but I’ve always been ready with my excuse that the reindeer must have been too full should the need ever arise. Just like my neighbor, you can also make them as gifts to young children. It’s inexpensive, easy and fast to make, yet it will bring a lot of joy and good memories to the children. Here’s the super easy recipe.

Magic Reindeer Food
1 pouch of instant oatmeal or about 2-5 tablespoons
1-2 teaspoons of shiny foil confetti (young children are especially attracted to the shiny foil and 1 teaspoon is a drop in the global environment, but if you have “green concerns,” you can use colored sugar sprinkles instead).
Mix the oatmeal and confetti and put it in the center of some plastic wrap, closing it with some curly ribbon to form a pretty pouch. Colored wrap makes it more festive. Hand one pouch to each child. Older kids will want to make it themselves. Children will sprinkle it with glee for the reindeer, loving not only the magic, but also the fact that they are caring for and feeding Santa’s reindeer.

WFMW — 10 Minutes Flat

wfmwbluebanner.jpgWell Shannon, at Rocks in My Dryer has given us a theme this week and she wants recipes for Works For Me Wednesday. Here’s the setup: It’s 5:30 p.m., we’re tired, we have a headache from having barely survived the worst day of our life and of course our cook is Missing In Action and we’re too poor for takeout. We don’t have any leftovers in the fridge or anything in the freezer that we can just zap because, you know, it’s the worst day from hell and we didn’t even think ahead to use our Crockpot, so what is going to work for me? And you?

Here’s four ideas:

1. Refer to my own blog for my Tomato Chicken Salad Recipe which I make in 10 minutes flat! Round it out with a cheese platter and fruit (no cooking there either, just pull it out of the fridge and slap it on a tray) and you still have a gourmet French meal! Now that works for me!

2. Grab my very best cookbook and look up the section “Dinners in half an hour”. What cookbook would that be, you ask? Dinners in half an hour is in The French Chef Cookbook. Well any cookbook by Julia Child will work too. Julia has the very best cookbooks because she not only tells us how to cook the recipes, but also tells us what NOT to do. With Julia by my side it wouldn’t matter if my brain were turned off, I know I don’t have to be concerned about anything because she will have tested every step right down to the last grain of salt. I could cook a recipe for the very first time and even serve it to a stereotypical mother-in-law from hell and not have one iota of concern. Now that works for me too;

3. Grab a Rachel Ray cookbook, because she too makes a complete meal in half an hour;

4. Grab one of Chef Emeril Lagasse’s children’s cookbooks because everything in there is super easy, super fast and super tasty. You can see my complete review of his series of children’s cookbooks right here on my Cooking For Children post.

WOW! Every Cookie Imaginable!

I recently received this from a friend. It has apparently been making the rounds through e-mail in many offices across the country, but if you didn’t get one, I think this just may come in handy for you this holiday season. Just click on the name of the cookie and it will take you right to the recipe at a family friendly website full of Christmas and holiday cookies. Their recipes are e-mail and printer friendly too so feel free to share or print your favorites by clicking on their icons. They even provide metric conversions. Enjoy!

WFMW — Household Tip for Eggs

HAPPY THANKSGIVING TO ALL!!

Sometimes a recipe will call for only an egg white or only an egg yolk.  Don’t throw out that good leftover!  Just freeze it and add it to your next omelet or scrambled eggs.  If you make sure they don’t get freezer burn, they will last quite a while, but I like to use them as soon as possible.

Bookcases at the Breaking Point? Join Paper Back Swap.

I meander through blogs one click at a time and I found what seems to be a great Web site for all of us bookworms. I periodically lighten the load on my bookshelves by taking lots of boxes to my local charity and start the process all over again by filling up those shelves quicker than my wallet appreciates. I know all of you fellow bookworms can identify.

Well, I’ll still give to charity of course, but I’m going to give Paper Back Swap a try and see if I can’t give my wallet something to cheer about for once.

Basically you sign up your unloved books (hardbacks too) for adoption at Paper Back Swap. When a fellow PBS member wants to adopt your book, you mail it to them and you can adopt someone’s unloved book. It’s an even trade book for book. The site is free. Even with postage, which PBS tells us is $1.59 for a paperback, that’s still cheaper than buying from a used bookstore.

They claim their members are the best part about their club.

Co-founder Robert Swarthout says, “What started as a trading system has turned into a social community of readers that share so much more than books. Our members transcend miles and become best friends through club communications, discussion forums and coffee-time chat rooms.”

There’s also a writer’s corner called The Eclectic Pen and a recipe corner, too. They claim to have a large selection of homeschooling books.

They have almost 2 million books available and have been recommended by Good Housekeeping, Wired, Real Simple, Martha Stewart.com, The Today Show, CNN, Nasdaq’s Marshall Loeb, ABC News, and numerous more media sources across the country, so they should be a reliable site.

I’m going to give it a try, and if you already have tried them, please let me and my readers know what you think.

Thursday Thirteen #6 — My Interests

I am sharing with you 13 topics which interest me and are important to me. They are in no particular order, because most of these would all tie with each other. These are topics
you see and which will recur on my blog. To see more participants in this carnival or for

1. Computers/Internet/Blogs/Technology/Science
These sort of overlap in many ways. I’m forward thinking and I’ve been using computers
since before my teen years, back in the days when people were saying it was a waste of
time, and it wouldn’t last. Wait, aren’t a lot of people still saying that? Well 30+
years later, I’m still interested. I remember asking for a calculator as a Christmas gift
when I was in Kindergarten. The people selling them were flabbergasted that a child would want one and thought no child would ever need one. This “pocket” calculator, the smallest on the market at the time, was about the size of a small paperback!

2. Fine Art
I was an art history minor and an art minor. I seriously considered switching it to my
major, and often wonder if I didn’t make a mistake. I draw, paint, photograph, make
ceramics and do a lot of new media paintings — that’s every stroke hand-painted by me, but instead of using paint, I use computers. Museums and galleries recognize new media, but the average person out there still claims the computer makes the paintings. Not so! This would be the equivalent of saying oil paint and brushes are the artists making the artwork. Computers do not make art. Paint and brushes do not make art. The people, the artists make art, regardless of which tools they use.

3. History/Biographies/Autobiographies
As much as I like the future, I also like the past. We can learn from our past and our
past can help us understand our present. I’m very much interested in people and their
lives which is why I like history and also what leads me to the next item.

4. Psychology/Sociology
I’m interested in people and what makes them tick. I’m also interested in science, so
psychology helps me understand the individual and sociology helps me understand the groups and societies we live in. In college my sociology professor had wanted me to switch majors to either sociology (he hoped) or psychology (which he admitted was related and thought I would like too). I ended up with an additional certificate in psychology, but I never switched majors to either psychology or sociology.

5. Cross-stitching/Crafts
My grandmother taught me how to cross-stitch and I spent numerous hours watching her even before she taught me how to do it. I find it very relaxing and as I like art and to create, cross-stitching and other crafts are just related to that.

6. Reading/Writing/Journalism/News/Books
These are all intertwined. As a professional journalist, writing and reading are just my
life. I just could not live without reading. I have to learn at all times and reading is
the best way for me to do that. I have been wanting to write since early childhood. I
have attempted not to write for a living, but life was just too miserable without a pen in
my hand or a keyboard at my fingertips. I’m a published journalist, but I would love to be a published author using either my journalistic skills to write non-fiction or even writing a
novel. I’m one of the crazy participants in National Novel Writing Month. Any publishers
out there interested in my writing voice?

7. Religion/God
I believe in God and shout it from the rooftops, but won’t attempt to convert atheists as
belief needs to come from inside your heart and soul. I worked for my parish for several
years and wanted to work there until retirement, but an evil man came into our midst,
getting rid of staff and clergy, swiftly putting a financially viable parish in the red,
and destroying the work of the last 40+ years. Some will turn away from God because of
him, but the destruction he brings is not of God. Destruction can never be of God.

8. Education
I love to learn, my husband and I have both taught, and since we have a son, education is very important to us. He went to private schools for several years and while that was fine, we found something better through an excellent public school system with an independent study program. Forget all the stereotypes of homeschooling and of public school. That’s not what it is. It’s more a combination of when people had private tutors teach their children, the one-room schools and parents nurturing their own children. The program is what it is thanks to our son’s wonderful teachers, especially the founder, Resa Steindel Brown. 9. Family
Family and extended family is extremely important to me. It is where we receive and give love and support. Here on Earth, not counting God in Heaven, it is the one most important thing and it just doesn’t get more basic than that.

10. Movies/Plays
I don’t watch much TV, but I love a good movie or play. While it can’t replace a good
book, it’s still a story, whether real or fictional, and I love to be entertained. I
prefer comedies, especially for movies, because I don’t know about your life, but my life
is enough of a drama as it is. I just don’t need other people’s too, especially the made-
up ones. I really like adventures too, because this way I can escape to some fabulous
world and live vicariously. I would like science fiction, but most don’t meet my quality
standards unfortunately.

11. Hiking/Walking/Swimming
I enjoy being in nature and these are the most fun forms of exercise for me. These are not boring to me. I enjoy the scenery. Running would be too fast and strenuous to enjoy the
scenery. These are also quiet and since I despise noise, anything with bouncing balls,
whistling referees or echoing gymnasiums just would not work for me.

12. Cooking/Gourmet Food/Reading Cookbooks
Yes, I read cookbooks. I actually read cookbooks more than I eat or cook. As a teen my
mom would tell me that I read cookbooks instead of eating. I also love to cook when I
don’t have a full-time job. If I’m working, then cooking is no longer a pleasure and
something that I do for the family that I love. It becomes a chore and a race to put
anything on a plate in front of starving eyes in less than half an hour from the time I run
through the front door. But when I am not working, I will use all my knowledge from
reading all these cookbooks and all my creativity and use cooking as another art-form. I
also like real food. I am against eating engineered chemicals, dyes, artificial products.
I like wild salmon, trout and other fish, I like real butter on all my foods and especially
my popcorn. And you really don’t want me to get started on cloned meat, or cloned
anything, because I’m really against that!

13.Travel
I don’t travel enough. I would love to travel 365 days a year, but that’s simply not
possible. I put roots down with a family and a house. Once upon a time I contemplated
becoming a foreign correspondent, a travel writer and even a pilot or a stewardess, just so
that I could travel, but I will just have to be satisfied with having been to Germany,
France, Switzerland, Italy, England, Washington, Oregon, California, Hawaii, Arizona,
Nevada, Georgia, … Oops, that sounds like another Thursday Thirteen! 😉

Homemade Bread Stuffing

If your family refuses to eat the ends of bread loaves or you get some hard leftovers, don’t throw them out. I have a tip just in time for Thanksgiving dinner. Just start saving them for your stuffing.

Accumulate them in a freezer bag and either tear up in small pieces or use your food processor. Add your favorite spices and butter and you’re ready to stuff your bird (even chicken). For better taste, I also add any of the following: ground sausage meat, celery, apples, raisins, broth, and/or sherry.

You’ve used bread your family would normally throw out, you get better stuffing than what you get in those boxes, you save money, and it’s always at the ready in the freezer. It’s great, so start saving now for your Thanksgiving and Christmas turkeys and your any day chickens.

Cooking for children

In the previous post, I mentioned Chef Emeril Lagasse’s Bam spices, which gave me an idea for today’s blog.

Our son is very much interested in science and experiments.  He enjoys experimenting in the kitchen too as an easy way to try out mixing, chemical reactions and such.  A couple of months ago he asked to get some cookbooks for some more serious cooking so off to the library we went to look in the children’s section.  While the majority of the books at our branch seemed to only have recipes like peanut butter and jelly sandwiches, root beer floats or celery sticks with peanut butter and raisins, Chef Emeril’s had real recipes.  Now I think even a child doesn’t need a cookbook to learn how to make a PBJ sandwich.  All they need is a parent to show them.

So we took Chef Emeril’s “There’s a Chef in My Soup” cookbook and went home for hands-on cooking lessons.  As a parent I was impressed by the introductory sections, especially the one titled “A Good Cook is a Safe Cook!”  We read it together and discussed the safety procedures.  We looked at all the tools of the trade and our son read every word of the lessons on blanching, working butter into flour, cooking with eggs, etc. as if it were the most exciting action-adventure.

With the preliminaries taken care of we decided on which recipe to make first — 1-2-3 Lasagna.  Chef Emeril managed to turn lasagna into child’s play and yet present to the dinner table a scrumptious dish which will remain one of our family traditions.

In the last couple of months our son has bookmarked so many recipes I’ve told him he’d be better off bookmarking the few exceptions he doesn’t want to try.  We have made many more recipes and equal numbers of favorites.  We picked up Lagasse’s other two children’s cookbooks, “There’s a Chef in My Family” and “There’s a Chef in My World” and have come to the conclusion that his recipes are explained simply for any beginner cook, not just children.  The results are consistantly delicious and while the steps are simple, the results are sophisticated for even an experienced cook, or as Chef Emeril says “kicked up a notch.”  Children and adults will both enjoy the process as well as the results.  It is an excellent opportunity for family bonding and might even be a godsend for working parents coming home tired from work as their children will soon be able to assist them in quickly putting a delicious meal on the table.  Our family highly recommends these three cookbooks which are available here on our website at infinitygoods.com.

Refreshing Tomato Chicken Salad for Labor Day Weekend

Happy Labor Day Weekend!

It’s the last long weekend of the summer and for many of us in the United States it means a great barbecue with family and friends or even a potluck.  Where we live right now it has been far too hot this last week with the weather people predicting no relief in sight, so no barbecue for us this year.  The news and even commercials have been telling us to not use our appliances until after 7 p.m. to prevent power grid outages.  Usually in the middle of the night when it’s cool we can open windows, but with this heat wave we’ve been forced to keep our air conditioning on 24/7.  The front page of the paper showed a local business’ room-thermometer’s needle hitting the maximum reading of 120 degrees Farenheit, or 50 degrees Centigrade!

With all this heat I was inspired yesterday to make something which required no cooking whatsoever.  It tasted great, and after lots of compliments I thought I would share it with you.  It will be a hit at your Labor Day potluck or your family’s table.  I thought about what was in my refrigerator and came up with this spur-of-the-moment recipe, and it was refreshing and quick — ready in about 10 minutes flat.  You can’t beat that!

Get yourself a serving bowl and a cutting board.  I grabbed four small tomatoes on the vine and sliced them.  They’re only about 1 1/2 to 2 inches in diameter.  I love the grape-sized tomatoes too.  If you prefer, you could use about four handfuls of those and leave whole, or if you’re patient, cut in halves.  One great big tomato will do too, but then you’ll need to dice it.  Add about an equal amount of mozzarella cheese, diced.  If you don’t have any on hand, a feta or Baby Bell or provolone should work well, too.  Whichever cheese you choose, pick one that’s not too hard like a comte or too soft like a triple cream brie.

I always have sun-dried tomatoes at the ready.  They add some really nice flavor which you adjust from mild to strong simply by the amount you use.  This time I used about 10, which I minced.  I had a beautiful roasted chicken on hand, so I put in a whole breast, also diced.  Here, instead of the roasted chicken you could substitute tuna, salmon, crab or sardines.  They would all taste great too, so just use what you happen to have and love.

Add some dried spices like Chef Emeril’s Bam or 21-Spice No Salt Seasoning found in a small, convenient bottle so you won’t loose too much flavor over time.  No worries if you don’t have any, just add your favorite spices to taste like thyme, oregano, marjoram, rosemary, some onion and garlic powder.  Add fresh sweet basil leaves.  We love basil so I put in lots, fresh from our yard.  Mint leaves would work very nicely, too.

Add a generous drizzle of extra virgin olive oil and some balsamic vinegar.  Toss the whole salad and it’s ready!  Try it. I know you’ll love it and it’s real healthy.  Any leftovers can be turned into a great sandwich, too.
